All the Fixins' to make Pico! If you're a fan of fresh salsa, you've got all the ingredients at your fingertips this week to make a batch of Pico de Gallo: tomatoes, hot peppers, onions, cilantro - and if you want to jazz it up a little more, sweet corn and sweet peppers. The recipe below will yield about two cups of fresh salsa. Chop it all up and gently toss tomatoes, cilantro, onion, hot pepper, garlic and 1 tablespoon lime juice in a small bowl; season with salt and more lime juice if necessary. Let sit, uncovered, to let flavors meld, about 10 minutes. All that's missing is the chips!
- 3 large ripe tomatoes, chopped
- ¼ cup cilantro leaves and tender stems, finely chopped
- ¼ white onion, chopped
- 1 jalapeño or serrano chile, finely chopped
- 1 garlic clove, finely grated
- 1 tablespoon fresh lime juice, plus more as needed
- 1½ teaspoons kosher salt
CALENDAR CORRECTION! I scrambled the dates last week when I mentioned the full Hwy 101 closure the weekend of September 19-21. Due to the closure we will be delivering ALL BANDON CSA TOTES to Well Within on Friday, September 19th instead of Saturday, September 20! Our goal is to have them at the pickup site by 7 pm on 9/19. Apologies for any confusion, and thank you to the CSA member who brought it to my attention.
